Lock and Mule is our restaurant in Lockport, IL. Like all our restaurants, the menu contains dishes ranging from familiar favorites to our chef's more adventurous creations. Lock & Mule is also home to our second brewery, helping us craft a portfolio of ice cold beers to suit any palette – from light, sessionable lagers and ales to dark and complex experimental brews. You’ll find a variety of beers on tap at any given time, including seasonal and limited-edition beers.

Christian Callejas

I believe that there are few things in this world than mean more to me than being able to be a part of a wonderful community. I look forward to providing the best experience for our guests with amazing service, delicious food, and making sure we all have fun while doing it. I have a great amount of experience in the hospitality industry and the vast skillset that I bring will help foster an inviting and engaging experience to all guests that visit Lock & Mule. I am excited to welcome all that come to Lock & Mule and grateful to be a part of the Tangled Roots Brewing Company Team.

Adam Delia

Graduating from culinary school right after high school, Adam Delia has spent a lifetime in the kitchen. With a wealth of experience spanning multiple restaurant openings and training programs, he quickly rose through the ranks in the hospitality industry. Most of his career has been dedicated to working in hotels, where he earned his first sous chef and executive chef positions. In addition to his culinary expertise, Adam brings a strong background in event planning and catering, aiming to elevate the already high standards at Tangled Roots. Committed to continuous growth, both personally and within the company, he strives to lead by example, fostering development in his team through hard work, structured systems, and achievable goals. Adam eagerly awaits providing all guests that walk through the doors with an exquisite culinary experience.
